Wyeast's Belgian Strong Ale yeast strain is a perfect option for producing golden strong ales. This strain is alcohol tolerant and will create a complex ester profile, well-balanced with subtle phenolics. Even with its well attenuated, dry, tart finish, the malt flavors and aromas will remain intact. This strain tends to stall at approximately 1.035; racking or slight aeration will encourage it to finish fermentation.
