Cover cropping is one of the best things you can do for your garden when you're not actively growing vegetables or other crops. You should never let your soil sit unplanted as it will erode and lose its beneficial microbe colonies due to the absence of roots to form symbiotic relationships with. Cover cropping is simple, easy, and can have a range of benefits. Cover crops can help with erosion, sequester carbon, add biomass, break up heavy soils, and some can even fix nitrogen or mine other nutrients from deep in the earth.
