This super specialty malt is designed to contribute a deep red color to your beer along with a full and complex malt character. Melanoidins are complex compounds that usually form during a decoction mash. These melanoidins are often found in bock and other dark lager styles. Melanoidin malt can be used in place of a decoction mash or simply to add malt complexity to your beer. Generally used at 1-20% of the grain bill.
