Description
Wyeast's Belgian Saison strain is the classic farmhouse ale yeast. This strain is a traditional yeast with complex aromatics like bubble gum. Spicy, tart and dry on the palate, this strain produces a crisp, mildly acidic finish that does well in elevated fermentation temperatures. Warm fermentation temperatures (at least 90 °F) or the use of a secondary strain can accelerate attenuation. This strain is known for its quick and vigorous start to fermentation, only to stick around 1.035 S.G. Fermentation will finish, given time and warm temperatures.
